Prep time: 5 mins Cooking time: 15-20 mins (serves 6) Ingredients 50g: pasta 500g: smoked haddock fillets, defrosted 750ml: milk 30ml: butter 30ml: flour salt and freshly ground black pepper, to taste 150g: feta cheese, thinly sliced or finely crumbled 1 tsp: fresh parsley, chopped fresh lemon juice, to serve Preparation 1. Boil pasta in a pan of salted water until al dente, then drain. 2. While the pasta is cooking, place the fish in a single layer in a pan and pour milk over. Bring to a boil and simmer lightly for 7-10 minutes (according to thickness of fillets) until the fish is cooked and breaks apart easily. Remove fish from the heat and flake roughly. Reserve the milk. 3. Melt butter in pan and add flour. Cook, stirring constantly, for 1 minute. Add the milk used to cook the fish and bring to the boil while stirring continuously. Simmer for three minutes. 4. Season sauce then pour over pasta. Add flaked fish, feta and parsley and stir gently to combine. Drizzle with fresh lemon juice and serve. From: Gulfnews
