Prep time: 10 min Cook time: 20 min Total time: 30 min (serves 4) Ingredients 3 tbsp : ghee 20g : garlic, finely chopped 2 quails, cleaned 20g : onion, finely chopped 100g : rice, parboiled 100g : assorted nuts 50g : raisins pinch saffron, soaked in milk onion-tomato gravy, optional salt Preparation 1. Mix together 1 tbsp ghee with garlic and salt. Rub the mixture all over quails and let sit for 10 minutes. 2. Preheat oven to 160°C. Heat remaining ghee in a pan. Add onion and sauté until transparent. Add remaining ingredients and mix well. 3. Stuff quails with mixture and roast until cooked through and golden brown. Remove and serve with gravy if desired.
