Prep time: 15 mins Cooking time: 25 mins (serves 10) Ingredients 75ml: vegetable oil 1kg: white onion, thinly sliced 10g: fresh thyme 5g: bay leaves 1.5l: clear beef broth or stock 1 baguette, sliced 150g: emmental cheese, grated salt and pepper Preparation 1. Heat oil in a large saucepan and sauté onion, thyme and bay leaves until onion is light brown. 2. Add beef broth and bring to a boil. Reduce heat and let it simmer for 15 minutes. Check seasoning. 3. When soup is ready, sprinkle baguette with cheese and place under a hot grill until cheese begins to melt. Serve with soup. From: Gulfnews
