This has been created by the recently appointed Executive Chef, Gabriël le Roux, and includes tropical versions of traditional favourites. The Lime Restaurant, open to all guests for breakfast, now features an all-day menu with Chef’s signature dishes such as a salpicón of fresh seafood in a light curried-crayfish mayonnaise presented in a vol-au-vent with a mango and coconut salad, or poached lobster tail with Marie Rose sauce, iceberg lettuce, tomato, coriander, lime juice and horseradish wrapped in puff pastry. The new menu at Lime is part of the innovations at Baros Maldives as the island celebrates its 40th anniversary year as the third resort to open in the Maldives. Complementing the informal ambience of Lime, the island’s iconic Lighthouse Restaurant focuses on gastronomic masterpieces and degustation menus paired with superb sommelier-selected wines.
